Slow Cooker Enchilada Casserole

You'll need:
1 large onion, chopped
24 oz or so of green enchilada sauce (verde) (I used red)
1 bag of Tyson's frozen, cooked & cubed chicken breasts (I needed to keep it simple today, that kind of Tuesday)
1 bag mexican shredded cheese
soft tortillas (corn or flour)
sour cream

On low for 4 hours or high for 2 hours cook frozen chicken, enchilada sauce & onions in your slow cooker. 2 hours before it's ready you're going to add your layers. On top of the mixture lay 4" strips of the tortillas until covered, top that with shredded cheese then more tortilla strips and one more layer of cheese. 30 min before serving add a smooth top layer of sour cream.
Cut into the layers and serve over your choice of rice. Super Yummy!

Momma craftiness 101

So I wanted to be crafty some more, and went to my mother-in-law's SUPER SATURDAY!!! I had a great time visiting old friends and catching up with everyone. While I was there this is what I made... I think they turned out totally great! I have some more ideas brewing in my head that I want to bring to life... hopefully soon!

Lizzie's Artwork 101

So lately I have been getting excited about crafting again. As all of you know I love to surf blogs and see everyone creativity, and see what I want to try. Well the other day I was surfing Serving Pink Lemonade, and she had this cute art project for kids. Click here for the tutorial. Lizzie was super excited about the sparkly paint. I thought it turned out really well, so we framed it, and are going to hang it on the wall to show off all of her latest and greatest creations.

Momma got a new haircut!!!

So I have been wanting to get my haircut for a long time. The A-line was just way grown out, and it was bugging so bad because my hair is at Krislynn pulling level, and she is a pulling machine. I have been talking to my friend Bev about cutting my hair the past 3 weeks, and of course my life gets busy and I forget to call. Well yesterday at church we started talking about my hair, and I made an appointment right there.. no excuses.. just get it done! Well I'm cleaning my house this morning.. totally forgot I set up an appointment... and there is a knock at my door. I'm thinking.. who the heck is at my house? and there Bev was... at my door to cut my hair. Getting your hair cut at home, while your babies run around and play in the hair is so worth it... another fabulous adventure for the Parker girls...

Trunk or Treat

Cindy and Krislynn
Jenny, Me, and Charlotte

Last night was our ward Halloween Trunk or Treat. Everyone loved our costumes. We borrowed my friends wagon and pulled the girls along behind us. I know it it is backwards.. the pioneers pulling the oxen, but hey it works...
We hope you have a Happy Halloween!!

Halloween is such a fun time of the year. We are grateful for wonderful kids who let us take a wide variety of pictures of them, even while they are struggling. Thanks to my wonderful husband who followed strict guidelines from Lizzie of what she wanted the face to look like, and to the great photographer for capturing all the great moments as a family.

GRAMMY AND GRANDPA

Grammy and Grandpa came down to visit the girls before Halloween. They wanted to see the girls in their Halloween outfits, and get some Lizzie and Krislynn time. They just love their Grammy and Grandpa. Thanks for coming to visit!

Delaney and Krislynn

One day at FHE Delaney and Krislynn were playing together. Krislynn wanted to roll like her cousin Delaney, but just couldn't do it.

She tried and tried, but she could only get from her back to her tummy, and then she was stuck.

Krislynn continued to get frustrated, and wanted the glory of rolling wherever she wanted just like Delaney. Her frustration built to this...

What did I do?

BYU vs.SDSU GO COUGARS!!!

We had a great time at the BYU Game. BYU smoked SDSU which was a major highlight of the game. Lizzie was lucky enough to go over to a friend's house and go play at the beach while Mommy, Daddy, and Krislynn enjoyed the game with the Parker family.

Happy 3 Years to us!!!

Happy 3 years to us!!! I can't believe that 3 years ago we had just tied the knot, and I was FINALLY Mrs. David Ryan Parker. I remember as David and I drove to the temple (Bekah Parker in the backseat) I was getting so nervous. My tummy was doing flips, and the whole engagement I was completely fine, but that morning I guess I realized today my life was going to change for the better, and I was going to be married for time and all eternity. It was a huge step for me and anyone who gets married, but when you know you have chosen the right person at the right time... everything else doesn't matter. David and I had our ups and downs, but I'm sure glad he stuck it out and married me. He has made me the happiest women in the world. He has blessed me with two of the most adorable girls in the world, that I just can't get enough of. Plus he is a catch and a half. His dimples just melt my heart every time that I see them.
We were over at a friends house on Sunday and they were asking how David and I met. Each time I tell the story I still get the butterflies in my stomach the day I first saw him. I knew there was something different about him that just drew me towards him. After a couple of months of getting to know him, and David not remembering my name I asked him out on a date for Valentine's Day. I had it all planned out down to the T. We had a great night of getting to know each other, plus who can say that on their first date they slept over at their husband's house? I CAN!!!
David thank for an AMAZING 3 years and more to come!!! I love you so much!!!

What Lizzie does when she finds something she isn't suppose to have....

Recently we have started reading the Book of Mormon as a family. We read every night in Lizzie's room while Lizzie lays in bed. David usually keeps the scritpures in the hall closet so we have easy access to it, but I thought we should keep it on Lizzie's bookshelf. So that is where I've been putting it . Well last night I don't remember if we just forgot to put it away or Lizzie climbed to get her scriptures. When I walked into her room this morning this is what I found...
I guess Lizzie thought she needed to add some modern revelations to the scriptures.... Then I looked at her and this is what I found...

She sure was proud of her artwork all over her body. The funny thing about this story is,she must have heard me in the hallway because she put the scriptures on the floor with the pen in it just how David and I do it every night. The cap was on the pen and everything. She was laying on her bed with her covers pulled up to her chin... she knew she was in trouble.. but the only thing I could do was laugh. Now getting the pen off is the tricky part of this story...

Stickers...Stickers.. Galore!!!

Lizzie LOVES stickers. She loves to put them on EVERYTHING!!! even her sister. She was so proud of her artwork! Krislynn is such a good sport.
